My favourite summer recipes

With Summer fast approaching I find myself daydreaming about BBQ’s, cocktails and refreshing smoothies as well as the wonderful recipes that allow me to create these things.

Below are some of my favourite easy to make recipes to get you in the mood for summer:

Gluten free BBQ sauce recipe (can be used on ribs and other meats)

  • 2 tablespoons of brown sugar
  • 4 tablespoons of runny honey
  • 1 tablespoon of gluten free Worcestershire sauce
  • 3 tablespoons of gluten free soy sauce/tamari sauce
  • 4 tablespoons of cider vinegar
  • 2 crushed garlic cloves
  • 1 teaspoon of grated ginger
  • 2 teaspoons of powdered english mustard
  • 1 pinch of paprika (ideally smoked)
  • Optional, 1 dash of Tabasco sauce

How to make:

Mix all ingredients together, once to a good consistency coat the meat that you choose to marinate and cook until brown and sticky.

Pina Colada recipe

  • 60ml white rum
  • 120ml pineapplejuice
  • 60ml coconut cream
  • wedge of pineapple, to garnish (optional)

How to make:

Pulse/crush all the ingredients along with a handful of ice into a blender. Once the liquid is smooth, pour into a tall glass and garnish as required!

Delicious Smoothie recipe

  • 1 pot of plain low fat yoghurt
  • 1 banana
  • ½ carton of orange juice
  • 6 frozen strawberries

How to make:

Blend the banana, yoghurt, juice, and strawberries for twenty seconds. Clean down the sides and then blend for an additional fifteen seconds.

Frozen yoghurt bark recipe (can also be made using chocolate)

  • 500ml Greek yoghurt
  • 1 teaspoon vanilla honey
  • 3 tablespoons honey
  • Pinch of salt
  • Toppings of choice: nuts, fruit, chocolate etc

How to make:

In a mixing bowl add the yoghurt, honey, vanilla and salt, stir until smooth.

Use a rimmed baking sheet lined with wax paper and apply the mixture using a spatula. Spread the mixture until it is 1/4 thick.

Top with your selected toppings. Freeze for 4 hours (until completely firm)
